Moonzies recipes: in the South, a good dish that is surprisingly healthy is Dandelion Greens. 1 large bunch dandelion greens, coarsely trimmed and chopped, 3 Tablespoons Virgin Olive Oil, 6 cloves garlic, thinly sliced, 4 scallions thinly sliced, whites and about 2 inches of the greens, 1/2 cups thinly sliced almonds toasted, 1/4 teaspoon salt, 2 pieces bacon. Bring a large pot of water to a boil first. Add Greens into the boiling rolling water. Cook until bright green, stirring a couple of times, 30 seconds to 2 minutes. Drain in a colander, then rinse with cold water. Drain again, pessing on the greens to remove excess water. in a separate skillet heat oil on medium heat. Add garlic, scallions, cook stirring, until tender and heated through, 1 to 3 minutes. stir in almonds and season. stir in almonds and season with salt. Serve immediately. ( allrecipes.com)
